You would like to visit Lake Garda’s best cheese shop? Then let’s go to Gavardo, a small town only a ten minutes drive from Salò. Keep your eyes open for the simple old-school shop run by the Orioli family – you might miss the shop’s inconspicuous front. Once you’ve been there, though, you will always find your way back. Locals as well as well-traveled chefs and gourmets from all over the world come to the Orioli’s. It is heaven for friends of the special dairy product.
The Oriolis love cheese. You can literally feel it once you enter their shop. Every piece of cheese, butter or the fresh milk – everything a cheese enthusiast desires – has had its place in the display for decades. Enrico and Giusi are recognized experts in the field and some of the varieties on offer are truly rare.
With shining eyes, real enthusiasm and small cheese knives, they cut big chunks for you to try from the even bigger cheese wheels. A dream come true for cheese enthusiasts.
One of the highlights is the Parmigiano-Reggiano delle Vacche Rosse cured for over 30 months. The milk for this cheese comes from an old breed of cattle, which was long ago replaced by breeds with a higher milk production, and consequently was nearly extinguished. The Vacche Rosse’s milk has a really deep and complex flavor. Only about 4,000 of these cheeses are produced per year. And the Oriolis have some of the longer cured, very tasty varieties at their counter.
To refine the legendary Gorgonzola, the family watches over its maturation process in their own house with a lot of dedication. And it is worth it. It is so creamy, you want to lick it off your fingers. Heavenly!
